HEALTHY BROWNIES RECIPE
Ingredients:
1/2 cup unsweetened applesauce (130g)
1 egg
1/4 cup peanut butter (60g)
2 tbsp maple syrup
1 tsp vanilla extract
2 tbsp melted butter
1/2 cup oat flour (or blended oats) 50g
1/4 cup cocoa powder (25g)
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup dark chocolate, chopped (40g)
1/2 cup raspberries, fresh or frozen (100g)

NUTRITIONAL INFO (per piece):
150 calories, fat 9.5g, carb 15g, protein 4g

Instructions:
Preheat the oven to 350°F (180°C) and line an 8×8-inch (20x20cm) baking dish with parchment paper. Set aside.

In a large bowl, whisk together the applesauce, egg, peanut butter, maple syrup, vanilla extract, and melted butter until the mixture is smooth and well combined.

To the same bowl, sift in the oat flour, cocoa powder, baking powder, baking soda, and salt. Stir until the batter is smooth and fully incorporated.

Gently fold in the chopped dark chocolate.

Pour the batter into the prepared baking pan, spreading it evenly. Scatter the raspberries over the top, pressing them gently into the batter.

Place the pan in the oven and bake for 20 minutes, or until the edges are set, and a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter). Be careful not to overbake.

Remove from the oven and allow the brownies to cool in the pan for at least 30 minutes. Once cooled, transfer to a cutting board and slice into squares.oo
